Peach Salad

This summer fruit may be my favorite food to eat, and it's definitely my favorite emoji to use. You know, because I love squats! ; )
This sweet, juicy fruit has a lot to offer, with a wide range of nutrients including:
  • Antioxidants like lutein, zeaxathin, beta-crytoxanthin... OK, these are a lot of big words. To simplify, the antioxidants in peaches protect your body against harmful effects of various diseases. They also keep your skin looking beautiful and young!  
  • Potassium, for electrolyte balance and the regulation of muscular tissues. 
  • Vitamin C, which protects your skin and immune system from infections. 
  • Just like carrots, they have beta-carotene, for eye health. 
  • High in fiber for maintaining good digestion. 
  • Iron for the formation of hemoglobin in red blood cells. 
  • Calcium and phosphorous, for maintaining strong bones and teeth.
  • Zinc for anti-aging properties. 
  • AND SO MUCH MORE! 

So basically, you need to EAT DEM PEACHES! Here is a yummy recipe to help add this nutritious fruit to your belly.

Peach Salad

Serves 4 

Ingredients
  • 3 peaches, sliced
  • 1 pint of cherry tomatoes, halved 
  • 1 cucumber, peeled and sliced
  • 1 avocado, sliced 
For the dressing:
  • 2 tbs. of olive oil
  • 3 tbsp. apple cider vinegar 
  • 1 tbsp. honey 
  • 6-8 fresh mint or basil leaves, roughly chopped
  • 1/4 tsp Sea salt and pinch of black pepper

Directions
  1. Whisk together the dressing ingredients and set aside. 
  2. Place all of the ingredients into a bowl, add the dressing and toss to combine.
