Don't be fooled by the list of ingredients, these rolls are simple to make (fun too!) and provide a packed punch of nutrients for your belly.
The key here is to make sure you prep first. I washed and sliced up all the veggies ahead of time, laid them out on a large dish and stored them in the fridge so they were easy to grab (and snack on!).
I provided a list of ingredients to make two awesome hand roll combinations, but the best part is, you can experiment with many flavors. Put your chef hat on and test drive your own hand roll creation! Add some sriracha for a little kick, toasted sesame seeds for added flavor, nuts or seeds for some crunch -the world is your oyster (Mmm smoked oysters would be a tasty ingredient too...)!
Another amazing benefit to this recipe were the left overs. Anything left was used to make a colorful Buddha bowl for lunch the next day. Enjoy happy fit bellies!

Rice, smoked salmon, sprouts, avocado, cucumber and ginger dressing.
Rice, roasted sweet potato, sprouts, red pepper, carrot, avocado and ginger dressing.
Other additions: Sriracha, Coconut aminos, wasabi, pickled ginger!
