Adding a little fat to your coffee won't hurt, it may actually benefit you. It curbs your appetite, stabilizes your blood sugar levels and negates any negative side effects from caffeine, like the jitters! Which is why heavy cream or full fat unsweetened coconut cream is my go to when cutting the bitter taste of coffee.
Options like skim milk, sweetened coconut, or soy milk can actually trigger a spike in your blood sugar and a surge in the production of your hormone, insulin. This negative reaction stops your body from burning fat, causes fatigue (the opposite of what you want from coffee) and then... triggers cravings!
So when you're deciding between skim milk or heavy cream, go for the full fat. Unless you are drinking 6 cups of coffee per day - that's another story.
